ricotta



This morning, I tried making ricotta cheese for the first time. An extremely easy recipe that involves a lot of milk, a pinch of salt, and a bit of citric acid, and results in a small amount of cheese and loads of curdless milk. Hmmm, I'm not yet convinced, except on the fact that we will have a cream soup to use up the milk.
